Mixed Veggie Cauliflower Rice
Ingredients
- 0.25 Diced yellow onions
- 0.25 Diced bell pepper
- 1 Tbsp coconut oil / butter
- 0.25 cup diced tomatoes
- 175g Cauliflower rice
- 1 habanero pepper / chilli (as much or as little as you can tolerate
- Salt to taste
Directions
- Heat the coconut / butter
- Fry the diced onion on medium heat for about 5 minutes
- Add in the bell pepper and cook for about 3 minutes
- Add the diced tomatoes and chilli
- Cook until most of the liquid is gone
- Add in salt to taste
- Add cauliflower rice and stir for couple of minutes
* You can always double the recipe or increase proportionately.
This made 1 serving for me.
