Mixed Veggie Cauliflower Rice

Ingredients

  1. 0.25 Diced yellow onions
  2. 0.25 Diced bell pepper
  3. 1 Tbsp coconut oil / butter
  4. 0.25 cup diced tomatoes
  5. 175g Cauliflower rice
  6. 1 habanero pepper / chilli (as much or as little as you can tolerate
  7. Salt to taste

Directions

  1. Heat the coconut / butter
  2. Fry the diced onion on medium heat for about 5 minutes
  3. Add in the bell pepper and cook for about 3 minutes
  4. Add the diced tomatoes and chilli
  5. Cook until most of the liquid is gone
  6. Add in salt to taste
  7. Add cauliflower rice and stir for couple of minutes 

* You can always double the recipe or increase proportionately.
This made 1 serving for me.
